needless to hide our love for brasserie cantillon. for us it is the real and only beer.
specifically the gueuze is a "blend" of three musts, three lambics. wheat, barley malt, water and nothing else. this must is fermented under the roof of the brasserie spontaneously without the addition of selected yeasts. the protagonists of this process are the brettanomyces, natural bacteria that will infect the must transforming it into a unique elixir. in a second time the lambics will be blended to become Gueuze.
if the lambic is the barley wine for connoisseurs, the gueuze is the champagne!
